BBQ Catering

The very best BBQ catering is cooked on site at the venue the event is being held.

Many catering companies that provide BBQ catering prepare their food ahead of time and transport the product in Cambro units ( Hot Boxes ) and then transfer to chafing dishes on site before serving.

While this method is effective, and honestly sometimes necessary for very large events. Our experience has proven there is no way that the quality of that product will be as good as if it were cooked on site and served directly to your guests. Particularly beef products. Items like hamburgers, steaks, tri-tip, beef kabobs all need to be cooked on site in order to be at optimum quality for maintaining the true flavor of the product, not drying out or being over cooked.

When our clients request any of those items we let them know that we will be more than happy to provide great beef products for their event, however we require that they are cooked on site.

2 Delicious Ways to Prepare Fresh Salmon

Here in the Pacific Northwest we are blessed with an abundance of Chinook, Silver and Coho salmon.
With many of our clients expecting guests from various parts of our country, and occasionally other countries, often times they choose to offer flavors of our region. Fresh salmon is one of the first things we recommend. Here are two methods of preparation that have been delighting our clients for many years.

Northwest Glazed Baked Salmon

Fresh salmon fillet coated lightly with a Brown sugar smoke flavored glaze, that not only imparts a delicious flavor but also helps to seal the natural juices of the salmon fillet, so that it stays very moist and delicious.  A perfect selection for buffet applications because as we all know, the last thing you want is dry salmon.

Blackened Salmon

Fresh salmon fillet coated with Cajun spices and seared in a hot iron skillet. Served over a bed of caramelized onions and then finished briefly in the oven and topped with Gorgonzola cheese. A delicious combination of flavors.
